
Actually, it's not my recipe but came to me via some Scottish friends who bravely flew into New York the day after September 11, 2001 - which has absolutely nothing to do with the recipe! From the USA, they headed to a guesthouse in New Zealand where they were served the muesli. They kindly got the recipe for me to use in our B&B in Mudgee and I've been making it ever since.
Anyway...
2 cups rolled oats
1/4 cup chopped nuts (I use blanched almonds)
1/4 cup wheat germ
1/4 cup bran
1/4 cup sunflowers seeds
1/4 cup sesame seeds
1/4 cup coconut
Mix the dry ingredients together in a baking dish.
Warm together on a low heat 1/3 cup honey and 1/4 cup oil (sunflower or similar NOT olive, peanut or corn).
Pour the warmed oil & honey onto the dry ingredients and mix well.
Bake at 150°C for 45 minutes, stirring the mix every 15 minutes.
When cooled, add some dried apricots or sultanas.
